Quinoa with Mushrooms and Kale

You have no idea what you are missing if you haven’t tried out quinoa; it is considered a superfood and most definitely a wonder food. I did try it with coconut oil and freshly squeezed lemon a friend recommended and it tasted delicious. However, after trying out several other recipes below is what I prefer most.

TIME: 20 minutes SERVINGS: 2


  • 2 handfuls of stemless kale cut into small pieces
  • 2 cups of chopped mushrooms
  • 2 cloves of thinly chopped garlic
  • 1 cup of rinsed quinoa
  • 1.5 cups of water
  • 1 tablespoon coconut oil
  • 1/2 lemon
  • salt to taste(sea salt)


1. In 1.5 cups of boiling water put in your quinoa and let it boil for some minutes over very high heat.2. Lower the heat, cover, and let them simmer until almost all the water is absorbed probably in a duration of 15-20 minutes.3. Stir fry garlic, mushrooms, and kale in coconut oil in a large pan.4. Then over the already cooked quinoa squeeze some fresh lemon juice and a pinch of salt.5. You are almost done, now into bowls scoop some quinoa then top it with the garlic, mushroom and kale mixture.6. There you go, enjoy your mouth-watering meal.
