Quinoa with Pumpkin and Thyme

Quinoa with pumpkin and thyme is sweet, nutty and herbaceous making it complex in the best way possible. Pumpkin and quinoa are truly an outstanding duo. Pumpkin’s natural sweetness with the toasty nuttiness of the quinoa is quite complementary. When those two base flavors are enhanced with a touch of sugar, butter and olive oil for fat as well as fresh thyme, you get layers of deliciousness with just the right amount of richness. Aside from flavor, this recipe is packed with nutrients including beta carotene, protein, and fiber. Feel free to serve it as a main dish or side.

Serves 3-4


  • 2 cups vegetable broth, reduced-sodium
  • 1 cup grains of quinoa
  • 1 cup chopped fresh pumpkin
  • 1 tablespoon brown sugar
  • 2 teaspoons chopped fresh thyme
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste

Directions step by step

  1. Rinse and drain the quinoa to remove the bitter-tasting outer coating.
  2. Bring the vegetable broth to a boil over medium-high heat.
  3. Pour in the seeds of quinoa. Add some salt and black pepper.
  4. Reduce to a simmer and cover.

  6. Remove from the heat and leave to steam for a few minutes.
  7. Uncover and fluff gently with a fork.
  8. Melt the butter in a medium skillet over medium heat with the oil.
  9. Add the pumpkin and cook for 10-12 minutes or until softened and browned.
  10. Add the cooked quinoa to the skillet with the pumpkin.
  11. Add the brown sugar, some salt, and black pepper.
  12. Stir and ensure that the sugar melts into the food. You don’t want the dish to be grainy.
  13. Taste and adjust seasonings as needed.
  14. Garnish with chopped thyme and serve.
